These biscuits are crispy, flavoursome and a crowd pleaser. The whole-grain flours of rye and barley add goodness, texture and fibre. Flaxseed is a superfood that we are loving at the moment, with lots of nutrients for growing bodies. Ginger is good at calming tummies (it is also delicious fresh in stir-fries and cakes!) and the warm scents of cinnamon and mixed spice will get the neighbours wishing they were being invited around for a cuppa.
We have cut down the sugar in this recipe and used unrefined dark muscavado which has a lovely depth of flavour.
Very easy to make, just add an egg white, butter and honey or golden syrup. We recommend using honey or Sweet Freedom, a natural sweetener made from fruits and carob.
